Profits
Store → Costing → Profits is operating profit: ticket $ minus food, labor, and overhead.
Pro. Staff see the Dashboard card. Labor and overhead stay $0 until you fill in Staffing and Overhead.
Before you start
- Mapped products — Build a menu
- Recipes and inventory unit costs
- Completed, mapped tickets (a POS line total, or a sell price on the product for old tickets)
- Optional: Staffing and Overhead so the headline is all-in
Incomplete tickets do not count. Comps or missing prices do not add revenue; mapped lines still add food.
Inventory on hand is not subtracted. Leftover prep is inside Food, not a fourth cost.
Use it
Select range — Today, Yesterday, week, month, or a custom day.
The line chart matches that range (hourly for a day, daily for week or month). Overlay is last week, or last month when the range is a month. During open hours on Today, ticket $ on the overlay is cut at the current clock.
The list:
- Food — recipe cost of what sold, plus leftover prep vs weekly par (same leftover as Waste). Extra sold past par still costs. Leftover only through today.
- Labor — scheduled hours × pay on those dates. Overnight shifts sit on the start date. This week / this month still includes remaining scheduled shifts.
- Overhead — weekly / monthly / yearly slices. Weekly is amount ÷ 7; monthly is amount ÷ days in that month; yearly is amount ÷ 365 or 366.
- One-time — Once bills on the charge date. Hidden when the range has none. Still inside the headline so a repair does not look like rent.
Operating profit = revenue − food − labor − overhead (one-time is part of overhead in that formula).

If it looks wrong
- No $ — unmapped products, tickets still Active, or no line total and no sell price.
- Food looks huge on this week — leftover is through today only; remaining days should not be full par leftover.
- Labor includes days you have not worked yet — that is the rest of this week’s roster.
- One-time missing — the bill is Monthly, or the charge date is outside the range.
