Waste
Store → Costing → Waste is leftover prep in dollars: weekly plan vs what sold, through Cookbook recipes and inventory unit costs.
Pro. Starter plans see an upgrade prompt. Managers and owners edit setup; staff see the Dashboard card.
Before you start
- Weekly planner — product counts
- Cookbook products with recipes and Weekly par
- Inventory — unit costs
- Hours — close time
- Point of sale — Square or Toast
- Completed, mapped tickets. Active tickets do not count.
Cookbook → Diary does not feed waste. That is recipe trials.
Leftover is only counted through today. Remaining days in this week or month are not treated as wasted yet.
Use it
Select range (Today, Yesterday, week, month, custom) sits next to Category or Ingredients.
The page is a bar chart and the itemized list under it (color dot, name, $).
At the top: waste $, % of prep, sold vs planned units.
Today stays in progress until store close, then that day is final.
- Category — which bucket drifted (cheese vs flour).
- Ingredients — which SKU.
- Hover a bar for $ and % of total.
Dashboard shows a compact card (summary, donut, top categories). View full waste in Store → opens this page.
If it looks wrong
- Wrong store in the header.
- Always $0 — pars, recipe costs, mapped products, completed tickets.
- Odd category split — inventory categories and recipe ingredient links.
